Weekend reading: National Dish

Anya Von Bremzen. History, and the Meaning of Home. Penguin, 2023.

I can never get over how many superb books are now published on food themes, on after another.

Consider—and you definitely should—this one, for example.

For starters, there’s the fabulous cover by Roz Chast, no less (I want one for my next book!).

For another, there’s its brilliant structure and what Von Bremzen does with it.  She is a cookbook author, best known to me for her memoir, Masterian the Art of Soviet Cooking, an account of what food was like for a child growing up in Moscow in the former Soviet Union.

National Dish uses what are assumed to be foods representing entire cultures to reflect on the meaning of food for personal identity and larger issues of gastronationalism.  Von Bremzen spent at least a month in each country examining how its particular dish did and did not represent the culture of Japan (Ramen noodles), France (Pot-au-Feu), Spain (tapas), and Mexico (mole), and others, necessarily ending with the most poignant, Ukraine (borsch).

Von Bremzen is great company on these explorations, delving into language, history, anthropology, and whatever else it takes to understsand the role of that particular food in that particular society.  A couple of excerpts:

Neopolitans were not Italy’s original mangiamaccheroni, however; the Sicilians were.  A twelfth-century Arab geographer, Muhammad al-Idrisi, was first to report that people near Palermo were making strings of dough called itriyya–-from the Arabic? Greek?  Hebrew?—which they traded “by the shipload” to Calabria and “other Christian lands.”  The Neopolitans?  They were called mangiofoglie (leaf eaters), or, more quaintly, cacafoglie (leaf shitters) for their massive intake of dark leafy greens—a forerunner of the Brooklyn dream diet.  (p. 52)

This, on “washoku—fuzzily defined as “the traditionally dietary cultures of the Japanese” and modeled on the equally fuzzy but successful “gastronomic meal of the French.”

But it was the UNESCO listing that produced a washoku explosion.  A word only faintly known before to the Japanese public was now everywhere, celebrated in cookbooks, media articles, gastronomic guides, and scholarly studies.  And the government—mixing bunka gaikō (cultural diplomacy and Brand Japan building—promoted washoku abroad as the nation’s ancient and healthy tradition.  An upscale pizza effect swung into action.  International recognition boosted washoku’s domestic cachet, swelling the pride that Japanest home cooks now took, according to polls, in their own intangible food heritage.

This is one terrific book, erudite but fun to read and a great contribution to the literature of food studies.  Enjoy!

Lunchables (OK, reformulated versions) are heading for a school near you

My email inbox last week was full of notes from people  who did not want me to miss the latest school food news: Lunchables—the prototypical ultra-processed meals, some made for kids—can now be sold and fed in schools (thanks Will Rosenzweig).

Starting this year, school administrators will be able to buy two different Lunchables offerings for the 2023-2024 school year: Turkey and Cheddar Cracker Stacker and Extra Cheesy Pizza, Kraft Heinz spokesperson Jenna Thornton told NBC News…the two Lunchables now meet National School Lunch Program guidelines and “have a specialized recipe that incorporates more protein and whole grains,” “reduced saturated fat and sodium, and an increased serving size.”

Supposedly, the meals have been modified—heIngredient list regular Lunchables cheese pizzare’s what Lunchables Turkey & Cheddar looks like—to meet USDA standards for school meals.

According to the accountof this  in The Guardian,

Kraft Heinz executive vice-president Carlos Abrams-Rivera said the company has produced two new varieties of specially formulated Lunchables containing “improved nutrition” so that they can become part of the National School Lunch program, which provides lunch daily to nearly 30 million students across the US.

I wanted to see an ingredient list.  Do they meet the NEW nutrition standards recently proposed by the USDA?

  • I searched for Nutrition Facts and ingredient lists for these products but could not find them online.
  • I called the consumer hotline at Kraft/Heinz.  After about 20 minutes of searching, the representative told me she did not have that information and I would have to get it from a school food salesperson.
  • Calls to the USDA’s Food and Nutrition Service also did not turn up the basic nutition information (thanks Jerry Mande).
  • Neither did calls to New York City’s school food people (thanks Pam Koch).

But then a reader sent me the Kraft/Heinz “sell sheet” (thanks Alexina Cather):

That reader also sent Nutrition Facts panels for the school lunch cheese pizza (330 calories) and the school lunch turkey & cheddar (270 calories).

Gulp.  Nutritionism in action: if it meets standards for salt and sugar, it’s OK?  I don’t think so.

It’s still ultra-processed.  How about serving kids real food?

School-based Lunchables raise the question: is a slightly better-for-you product necessarily a good choice?

Not in this case.

The entire idea of reformulated branded products is just plain wrong.

Why?  Because these products are advertisements for the brand’s regular offerings.  Nobody explains this better than Michael Moss in this short video.

Plastics in the food system: a big problem, getting worse

Last week, I ran across three items related to plastics in our food system.  The big issues: waste, pollution, and harmful chemicals.

(1) Fortunately, Civil Eats has done all the work and produced this must-read compendium of articles.

Of all the issues we cover, one in particular has all of us at Civil Eats deeply concerned: the widespread overuse of plastic in food and agriculture. From the myth of recycling and the millions of tons of plastic in the oceans, to the abundance of “forever chemicals” and microplastics making their way into our food and our soil, plastics are contaminating the food chain, polluting the environment, and making us sick. And while there are important ways individuals can address the problem, they often feel like a drop in the bucket when compared to the ways industry is shaping the narrative, increasing the amount of plastic being produced, and stalling or opposing regulation.

(2) I also ran across this notice from Food Dive:  “Coca-Cola, Unilever among top plastic polluters, report says.”  This excellent summary refers to The #BrandAudit2021Report from the group, Break Free From Plastic.

The report points out that this is the fourth year in a row Coca-Cola is the #1 plastic polluter.  Here are the report’s top ten.

(3)  Phthlates.  In her Technically Food newsletter, Larissa Zimberoff talks about potentially harmful chemicals that leach into food from plastics, particularly plastic gloves.

The study found that pthalates (an industrial chemical) were found in food samples taken from chains including McDonald’s, Pizza Hut and Chipotle. These included DnBP, which has been linked to a heightened risk for asthma, and DEHP, which has been linked to an increased risk of reproductive problems. Other problems: disruption to the endocrine system (yes, that’s where diabetes comes from) and behavioral disorders in children…The main source of pthalates in food are the ubiquitous plastic gloves worn in food handling, but also in packaging and processing equipment. 

And a new study looks at phthlates in fast food.  Here’s what the Washington Post says about it:

new study out Tuesday reportsthat far too often, small amounts of industrial chemicals called phthalates (pronounced THA-lates), which are used to make plastics soft, have been found in samples of food from popular outlets including McDonald’s, Pizza Hut and Chipotle….The study found harmful chemicals in a majority of samples collected. Phthalates are linked to health problems, including disruption to the endocrine system, and fertility and reproductive problems, as well as increased risk for learning, attention and behavioral disorders in children.

Help save school nutrition standards. Deadline extended to April 22

Here’s something useful to do while waiting out the Coronavirus crisis: help preserve school nutrition standards.Dea

The Center for Science in the Public Interest has organized a call for action.

The USDA recently proposed changes that would weaken school nutrition. The latest proposal would allow students to choose pizza, French fries, and cookies regularly in place of a healthier school lunch. It would allow more French fries in place of carrots in school lunch, more fried hash browns in breakfast, and less fruit in some school breakfasts. These changes are on top of the 2018 school meal rollbacks that locked in unsafe levels of sodium and reduced whole grains.

Deadline for comments extended until April 22.

Here is what you can do to help:

  • Submit a comment to the docket here.  If your organization needs  model (here is one).
  • Get your social networks to generate individual comments. You can use CSPI’s online alert for this
  • Sign a group letter by Friday, March 20. (download the letter here.)
  • Spread the word through social media. CSPI provides some model Tweets:

Another 2020 trend? Glitter in poop

For this I must thank NutraIngredients.com: Firm launches glitter-infused multivitamin to add ‘poop-time pizzazz.’ 

I thought that had to be worth a closer look.

It turns out that a company that sells supplements by subscription has invented a multivitamin with edible glitter.

Why?  To “add some pizzazz into poop-time,” of course.

The limited-edition supplement, created and distributed by UK-based WeAreFeel, not only contains glitter made from natural acacia gum (arabic gum) but also 18 key vitamins and minerals.  Being healthy and getting all the nutrients you need shouldn’t be dull and boring, hopefully the prospect of having a glittery toilet will encourage more people to get their daily dose of nutrients!  The product follows hot on the heels of the French firm Lutin Malin, which made available dietary supplements that claim to make flatulence “smell like roses”…

Along with the multivitamin’s use of Arabica gum, the non-toxic glitter combines vitamin A, D3 and folic acid as well as minerals such as magnesium, zinc and iron amongst others. The multivitamins also contain no GMO, anti-adherents, lactose or gluten.

I’m so relieved (as it were).

It looks like a long year coming up.

Pillsbury got me started thinking about this tradition.

But lots of other people have also thought about putting foods on Xmas sweaters.

I particularly like the design of this one.
