Plant-based meat: the cosmetic color problem

Plant-based meats are touted as the technological solution to the health and environmental problems caused by excessive meat-eating.   Venture capital is flooding to what seems like a hot new market.

One objection to these products is that they are heavily processed and contain long lists of processing ingredients (my emphasis on the color ingredients).

The Beyond Burger: pea protein isolate, expeller-pressed canola oil, refined coconut oil, water, yeast extract, maltodextrin, natural flavors, gum arabic, sunflower oil, salt, succinic acid, acetic acid, non-GMO modified food starch, cellulose from bamboo, methylcellulose, potato starch, beet juice extract (for color), ascorbic acid (to maintain color), annatto extract (for color), citrus fruit extract (to maintain quality), vegetable glycerin.

The Impossible Burger: water, textured wheat protein, coconut oil, potato protein, natural flavors, 2% or less of: leghemoglobin (heme protein), yeast extract, salt, soy protein isolate, konjac gum, xanthan gum, thiamin (vitamin B1), zinc, niacin, vitamin B6, riboflavin (vitamin B2), vitamin B12.

I was intrigued by this article from Food Navigator about the color problem.  Plant-based meats are naturally an unappealing grey and need color to make them appear palatable. What to do?

According to botanical extract supplier, Naturex, whose portfolio includes colouring foods, plant-based meat analogues are “a booming sector​” and, with colour one of the most important factors in determining a food’s appeal, manufacturers are interested in natural ways to colour meat alternatives.

Category manager for natural colours at Naturex Nathalie Pauleau said that carmine, derived from cochineal insects, is the most frequently used colour for real meat applications but cannot be used in plant based products because it is not vegetarian.

Vegetable-based alternatives include beetroot or red radish concentrates that deliver good colouring results, and in Europe, both can be classified as colouring foods​she said.

But there are big problems with color stability under conditions of heat and high or low pH.  If manufacturers want a browner color, carmelized sugar sometimes works.

As for the “bleeding” burger produced by Impossible Foods: this is

a plant-based burger made from the standard base ingredients of wheat, potato and soy protein. The addition of its IP-protected ingredient, leghemoglobin, however, means that the burger’s label lists added flavours but no colours.  Leghemoglobin is a heme molecule similar to myoglobin and haemoglobin that make blood and meat red but is found in the roots of nitrogen-fixing plants such as soy, meaning it is vegetarian-friendly. When added to the burger, it looks like blood.

And how do these taste?  Not bad, by most reports.

But one of my personal food rules is never to eat anything artificial.  These products are off my dietary radar.

When are added sugars not? The answer in FDA-speak.

Nutrition labels may seem self-evident but it takes volumes of Federal Register notices to explain how every word works.  When it comes to food labels, the devil is in those details.

Take “Added Sugars,” coming soon to a food label near you.

How does the term apply to honey and maple syrup or, for that matter, sugar itself.  These are sugars ready to add.

Pure honey and maple syrup producers are worried that when you see grams of Added Sugars on their labels, you will think that these natural products have been adulterated with—gasp—High Fructose Corn Syrup.

The producers of sugar-sweetened cranberry products are also concerned.  They worry that the added sugars will discourage you from buying cranberries.

Here is how the FDA suggests dealing with these “problems,” in quotes because they are problems for producers, not you and me—we know what “added” means.

The purpose of this draft guidance is to advise food manufacturers of our intent to exercise enforcement discretion related to the use in the Nutrition Facts label of a symbol “†” immediately after the added sugars percent Daily Value information on single ingredient packages and/or containers of pure honey or pure maple syrup and on certain dried cranberry and cranberry juice products that are sweetened with added sugars and that contain total sugars at levels no greater than comparable products with endogenous (inherent) sugars, but no added sugars.

Got that?

Pure honey and maple syrup get a “†” indicating that they have no more sugar than any other comparable sugar.

Cranberries are more complicated:

With respect to the labeling of certain cranberry products, cranberries are a naturally tart fruit, and certain dried cranberries and cranberry juice products have added sugars added to them to bring the total sugars per serving up to levels comparable to the levels of non-cranberry competitor products that contain equivalent amounts of total sugars, but whose labels list zero “added sugars” because their fruit products are inherently sweet.

Did you get that?

If I read this FDA-speak correctly, the FDA is making an exception for cranberries.  It agrees that the Added Sugars in cranberries also deserve a “†”.

Why is FDA allowing this?  The Draft Guidance explains:

We received comments from the cranberry industry to the final rule and subsequent correspondence that the added sugars declaration would be detrimental to the cranberry industry by implying that cranberry products are less nutritious than competitive products that have similar amounts of total sugars and nutrients.

These comments were similar to those we received which noted that grape juice contains 36 grams of total sugar with no added sugars while cranberry cocktail, with sugars added for palatability because cranberries are naturally tart, generally contains 28 grams of total sugars including 25 grams of added sugars and has 30 fewer calories per serving than 100% grape juice.

Likewise, comments explained that sweetened dried cranberries contain 29 grams of total sugars including 25 grams of added sugars per serving while raisins contain 29 grams of total sugars with no added sugars per serving. Both sweetened dried cranberries and raisins have the same number of calories per serving and a similar nutrient profile.

In translation, you are not supposed to be concerned about the Added Sugars in cranberries.

But couldn’t you could buy real cranberries and add a whole lot less sugar than that?

Chalk this as a win for cranberry lobbyists.

Annals of marketing: Bottled ocean water?

I am ever in awe of the creative ways in which marketers sell—water.

George Kent sends me this brilliant example from Hawai’i: Kona Deep.

This, according to the website, is mined from deep ocean waters off the coast of that state.

Kona Deep offers a very different hydration experience because of its unique blend of naturally occurring deep ocean electrolytes.

“Naturally occurring deep ocean electrolytes?  You mean, like, salt?

Indeed it does.

Kona Deep accesses that mineral rich deep ocean water and desalinates it using reverse osmosis while preserving its natural mineral and nutrient content.

Professor Kent did not mention how much this costs.

Translation: Kona Deep is desalinated ocean water.

Water, let me remind you, costs pennies from the tap.  Most tap water in the United States is safe to drink and tastes just fine.

  • If you are worried about the chlorine taste, pour some tap water into a pitcher, stir it up a bit, and leave it out overnight.  The chlorine will vanish.
  • If you are worried about contaminants, use a filter.
  • If you need convenience, use a water bottle and fill it with tap water.

Bottled water may be handy, but it raises at least three issues:

  • Financial
  • Environmental: energy cost, waste, and litter removal
  • Political: Bottled water reduces public trust and advocacy for municipal water supplies

Caveat emptor.

Annals of food marketing: define “egg”?

Competition in the food service industry must be fierce these days.

My colleagues who are members of the Academy of Nutrition and Dietetics recently received this letter from a public relations firm working for Panera.

Subject: Panera’s Quest to #RespectTheEgg

Did you know 50% of the top 10 fast casual restaurants that sell breakfast have an “egg” made of at least five ingredients, often more? That’s why Panera has officially petitioned the FDA to establish a clear definition for the term “egg,” in an effort to improve standards and transparency throughout the food industry.

In the meantime, customers can rest assured that when they order an egg at Panera, that’s exactly what they’re getting. Panera has launched a line of new breakfast sandwiches featuring 100% real, freshly cracked, cooked-to-order eggs with no additives at all.

The press release does not say what evil additives are used by Panera’s competitors.  Fortunately, Forbes has a list.  Its top prize goes to Subway, but the others don’t look much better.

Here’s the ingredient list for Subway’s Egg Omelet Patty (Regular):

Whole eggs, egg whites, water, nonfat dry milk, premium egg blend (isolated pea product, salt, citric acid, dextrose, guar gum, xanthan gum, extractive of spice, propylene glycol and not more than 2% calcium silicate and glycerin to prevent caking), soybean oil, butter alternative (liquid and hydrogenated soybean oil, salt, soy lecithin, natural and artificial flavors, beta carotene (color), TBHQ and citric acid added to protect flavor, dimethylpolysiloxane (antifoaming agent added), salt, beta-carotene (color).

Hey—eggs are the first ingredient.

Panera isn’t really asking for a standard of identity for eggs.  It’s asking not to count an egg as an egg if these kinds of things are added to it.

I can’t wait to see what the FDA does with this one or if it even tries to attempt to draw the line between the items in the non-egg “premium egg blend” and additives like salt and pepper.

USDA Secretary issues guiding principles for farm bill

Secretary Sonny Perdue has released his blueprint for the 2018 farm bill.

Its goal is to “improve services while reducing regulatory burdens on USDA customers” [translation: Big Ag].

USDA, he says, supports legislation that will do a great many things for farm production, conservation, trade, food and nutrition services, marketing, food safety, research and education, and natural resources.

There are a lot of words here and it’s hard to know what they mean, even reading between the lines.

For example, here are USDA’s principles for SNAP (food stamps), with my [translations and questions]:

• Harness America’s agricultural abundance to support nutrition assistance for those truly in need.  [This sounds like a food distribution program, but I’m wondering how “truly in need” will be defined.]
• Support work as the pathway to self-sufficiency, well-being, and economic mobility for individuals and families receiving supplemental nutrition assistance.  [This means work requirements, but where will the jobs come from?]
• Strengthen the integrity and efficiency of food and nutrition programs to better serve our participants and protect American taxpayers by reducing waste, fraud and abuse through shared data, innovation, and technology modernization. [This means spending hundreds of millions a year on fraud prevention].
• Encourage state and local innovations in training, case management, and program design that promote self-sufficiency and achieve long-term, stability in employment.  [The jobs?]
• Assure the scientific integrity of the Dietary Guidelines for Americans process through greater transparency and reliance on the most robust body of scientific evidence.  [Weren’t they always based on the available science?  This sounds like a way to prevent the guidelines from suggesting eating less of junk foods].
• Support nutrition policies and programs that are science based and data driven with clear and measurable outcomes for policies and programs. [This one translates to you can’t set nutrition policies unless you can demonstrate beneficial outcomes—fine in theory, but policy-blocking in practice].

Reading through the other sections is equally non-reassuring.  Where is a vision for a farm bill that promotes health, sustainable agriculture, and small or mid-size farms, protects farm workers, and reduces greenhouse gases?

Weekend Reading: Trends and Predictions for 2018

The Institute of Food Technology publishes a newsletter.  IIts December 27 issue provides a roundup of food-trend predictions from a bunch of sources.

I’ve picked out a few examples from among the long lists.

The editors of Food Technology: Animal Welfare Versus Price: The stigma of conventionally produced animal products will decrease as consumers realize that they cannot or will not absorb the higher costs associated with “humanely raised” beef, poultry, and pork.  —Toni Tarver, Senior Technical Editor

McCormick: Handheld Flavor Fusion: Take to the streets for the latest fusing of global cuisines. Carts, trucks, and food halls are merging high-flavor fillings with unique crepes, buns, and breads for loaded street fare you eat with your hands. Arepas are a taco-sandwich hybrid made from crispy corn cakes stuffed with sliced meat, veggies, and spicy tzatziki sauce.

Firmenich has announced fig as “Flavor of the Year” for 2018 based on the growing appeal for this healthy and fruity flavor worldwide. Long touted for its culinary uses as well as its health benefits—including its high fiber content and a variety of essential minerals such as magnesium, manganese, calcium, and potassium—fig has surged in popularity in recent years.

Innova Market Insights: the global market for dairy alternative drinks is expected to reach $16.3 billion in 2018, up dramatically from $7.4 billion in 2010….As consumers become more concerned about naturalness and minimal processing techniques, the industry is reviving traditional processes such as fermented foods and cold brew tea and coffee, alongside the development of new ones.

Whole Foods: Because powders are so easy to incorporate, they’ve found their way into lattés, smoothies, nutrition bars, soups, and baked goods. For an energy boost or an alternative to coffee, powders like matcha, maca root, and cacao are showing up in mugs everywhere. Smoothie fans are raising a glass to powders like spirulina, kale, herbs, and roots. Even protein powders have evolved beyond bodybuilders to pack in new nutrients like skin- and hair-enhancing collagen.

Mintel: Concerns over safe packaging disposal will increasingly color consumers’ perceptions of different packaging types, and impact shopper purchase decisions. While collecting waste plastic from the sea to recycle into new packaging can raise consumer awareness, it won’t solve the problem. In order to keep plastic out of the sea, a renewed effort toward the circular economy is needed to keep packaging material in use.

National Restaurant Association: According to the survey, menu trends that will be heating up in 2018 include donuts with non-traditional filling, ethnic-inspired kids’ dishes, farm/estate-branded items, and heritage-breed meats. Trends that are cooling down include artisan cheeses, heirloom fruits and vegetables, and house-made charcuterie.

Sterling Rice GroupMoringa is the Thinga: Consumers just can’t get enough of the green, which is why we predict that moringa—a superfood derived from the dried leaves of the “tree of life”—will be popular in 2018 and beyond. With more protein, fiber, calcium, and vitamins than matcha, watch for moringa to become the next matcha or golden milk.

CCD Innovation: Cannabis Cuisine: Ready or not, modern and artisan THC- and CBD-enhanced cuisine goes beyond brownies in 2018 thanks to “potrepreneurs” at all levels.
